Samphire in soup

Ingredients

  • Samphire

  • 1 sweet potato (300-400g)

  • fresh ginger

  • curry paste

  • tumeric, allspice, cinnamon, cardamon, bayleaf, pepper

  • 400ml vegetable broth

  • 400ml coconut milk

Instructions

  1. Peel the sweet potato and cut into 2cm cubes.
  2. Peel and chop the ginger
  3. In the pot, fry up the ginger, curry paste and spices
  4. Add the sweet potato cubes and broth
  5. Cook until soft
  6. Remove bayleaf
  7. Add the coconut milk and blend it all up
  8. Serve with a handful of samphire in each bowl
