Samphire in soup

Ingredients

Samphire

1 sweet potato (300-400g)

fresh ginger
-
curry paste
-
tumeric, allspice, cinnamon, cardamon, bayleaf, pepper

400ml vegetable broth
-
400ml coconut milk
Instructions
- Peel the sweet potato and cut into 2cm cubes.
- Peel and chop the ginger
- In the pot, fry up the ginger, curry paste and spices
- Add the sweet potato cubes and broth
- Cook until soft
- Remove bayleaf
- Add the coconut milk and blend it all up
- Serve with a handful of samphire in each bowl
